Strawberry + white chocolate chips. How can you resist this perfect combination? The white chocolate chips are melted and incorporated into the batter. These bars are so rich with white chocolate. I know 2 cups of white chocolate is alot and it is damn sinful to snack on these bars but it's only once in a while right? Just moderate the amount you eat and all will be good! Well, i would not recommend you to cut down on the amount of white chocolate chips because it will affect the richness of the cake. Well, I regretted reducing the amount of white chocolate chips when i baked these bars. In fact, I will probably add slightly more than the stated amount for a richer cake the next time round. Try opting for better quality white chocolate, i believe they make a difference! I made some changes and cut down the amount of sugar required by the original recipe and the sweetness was just right! These strawberry white chocolate chip bars are such happy bakes that boost my day. Baked these bars just before meeting my army friends for dinner and they were gone by the time i returned home! 

Ingredients:
1/2 cup of butter
2cups of White Chocolate Chips
1 cup of all Purpose Flour
2 Eggs
65g of Sugar
1/2 tsp of salt
1tsp of Vanilla Extract
1/2 cup of Strawberry Jam
1/2 cup of Sliced Almonds

1. Preheat the oven to 180 degrees celcius and line an 8X8 inch baking dish with parchment paper and grease them, set aside. 
2. Microwave the butter and 1 cup of white chocolate chips for about 1 min or until the mixture is smooth and melted. 
3. In a large bowl, whisk together the eggs and sugar until the mixture becomes light and pale in color. Add the melted butter and chocolate mixture and whisk until combine
4. Add in the flour and salt, mix to incorporate. press 2/3 of this batter in the bottom of your prepared pan and bake for about 15 mins or until lightly golden brown. 
5. Microwave the jam for about 1 minute under medium heat or just warm enough to be runny. Spread the jam over the cooked crust. 
6. Add the remaining white chocolate chips to the remaining batter, drop spoonfuls of the batter on top of the jam, sprinkle over the almonds and pop it back into the oven to bake for about 25 minutes or until the edges are golden browned. 
7. Let them cool completely and cut them into squares. (:
